Ingredients
Healthy burger sauce
Greek yogurt (0–2%)
60 gDijon mustard
1 tspTomato paste
1 tspPickle brine
1 tspFinely chopped pickles
1 tbspGarlic powder
1/4 tspSmoked paprika
1/4 tspBlack pepper
to tasteBurger patty
Lean beef mince (5% fat)
150 gOnion powder
1/2 tspSalt
1/4 tspBlack pepper

Wholegrain burger bun
1Lettuce leaves
2–3 leavesTomato

- Make the sauce: in a small bowl combine Greek yogurt, Dijon, tomato paste, pickle brine, chopped pickles, garlic powder, smoked paprika and black pepper. Stir until smooth and chill while you cook.
- Season the mince with onion powder, salt and pepper. Gently shape into one patty about 1.5–2 cm thick — do not overwork the meat.
- Heat a non-stick skillet or grill pan over medium-high heat. Cook the patty for about 3–4 minutes on the first side until well browned.
- Flip and cook 3–4 minutes more. In the last minute, add the cheese slice, cover briefly to melt. Rest the patty 2–3 minutes.
- Split the bun and toast the cut sides in the same pan for 30–60 seconds until lightly golden.
- Assemble: spread sauce on the bottom bun, add lettuce, the cheesy patty, tomato, onion and pickles. Add a little more sauce, then the top bun. Serve immediately.
Chef tips
- Don’t press the patty while cooking — it squeezes out juices.
- Toasting the bun helps stop the sauce from soaking through.
- Resting the meat for a couple of minutes keeps the burger juicier.
