Ingredients

Carbonara sauce

Egg
1 large
Greek yogurt (0–2%)
40 g
Grated Parmesan
20 g
Black pepper
1/2 tsp

Pasta & toppings

Wholewheat spaghetti (dry)
75 g
Turkey bacon
50 g
Frozen peas
60 g
Garlic
1 clove

Method

  1. Bring a pot of salted water to a boil. Cook spaghetti until just al dente; reserve 80 ml pasta water before draining.
  2. Meanwhile whisk egg, Greek yogurt, Parmesan and black pepper in a bowl until smooth.
  3. In a non-stick pan over medium heat, cook turkey bacon until crisp at the edges, 4–5 minutes. Add minced garlic for 30 seconds.
  4. Add peas and a splash of pasta water; warm 1–2 minutes.
  5. Reduce heat to low. Tip in drained spaghetti and toss to coat in the pan juices.
  6. Remove pan from heat. Quickly stir in the egg–yogurt mixture, loosening with reserved pasta water until silky — the residual heat should thicken the sauce without scrambling.
  7. Taste, adjust pepper, and serve immediately.

  • Off-heat mixing is the key to a glossy sauce that does not scramble.
  • Save pasta water — it emulsifies the sauce better than plain water.
