Egg-white enriched custard on wholegrain bread with yogurt and berries.

Weekend French toast remade with wholegrain bread soaked in an egg-and-egg-white custard, cooked in a non-stick pan and finished with Greek yogurt and berries instead of syrup puddles.

Ingredients

Custard soak

Eggs

Egg whites
80 ml
Low-fat milk
60 ml
Vanilla extract
1/2 tsp
Ground cinnamon
1/2 tsp
Salt

Bread and topping

Wholegrain bread slices
4 slices
Olive oil or butter for the pan
1 tsp
Greek yogurt (0–2%)
100 g
Mixed berries
150 g
Honey
1 tsp

Method

  1. Whisk eggs, egg whites, milk, vanilla, cinnamon and salt in a shallow dish until evenly combined.
  2. Soak each bread slice for 20–30 seconds per side so the custard absorbs but the bread still holds together.
  3. Heat a non-stick skillet over medium heat with the oil or butter. Cook slices for 2–3 minutes per side until golden and the custard is set.
  4. Plate two slices per person. Top with Greek yogurt and berries, then drizzle lightly with honey.
  5. Serve immediately while the toast is crisp at the edges.

Chef tips

  • Staler bread soaks better without falling apart.
  • Medium heat prevents a burnt outside and raw centre.

Substitutions

  • Egg whites → One extra whole egg
  • Honey → A dusting of cinnamon only
