Ingredients
Beef filling
Lean beef mince (5% fat)
300 gOnion, finely chopped
1/2Garlic, minced
1 cloveTomato paste
1 tbspGround cumin
1 tspSmoked paprika
1 tspChilli powder or cayenne
1/4 tspSalt
1/2 tspWater
60 mlOlive oil
1 tspSlaw, crema and tortillas
Soft corn tortillas
6 smallRed cabbage, shredded
120 gCarrot, grated
1 smallLime juice
1 tbspGreek yogurt (0–2%)
80 gFresh coriander, chopped

- Toss cabbage and carrot with half the lime juice and a pinch of salt. Set aside to soften slightly.
- Stir yogurt with remaining lime juice and half the coriander for the crema.
- Heat olive oil in a skillet over medium-high heat. Soften onion for 3 minutes, add garlic for 30 seconds, then add beef. Cook 5–6 minutes, breaking it up, until browned.
- Stir in tomato paste, cumin, paprika, chilli and salt. Add water and simmer 2–3 minutes until the beef is coated and glossy.
- Warm tortillas in a dry pan or over a low flame until soft and lightly toasted.
- Fill each tortilla with beef, slaw and a spoon of yogurt crema. Finish with remaining coriander and serve.
Chef tips
- Warm tortillas just before filling so they stay flexible.
- Let the beef simmer briefly with water so spices cling instead of tasting powdery.
