Why this remake works

120 gCocoa powder, unsweetened
40 gBaking powder

Greek yogurt (0–2%)
150 gEggs
2Light brown sugar
80 gOlive oil or rapeseed oil
2 tbspVanilla extract
1 tspDark chocolate chips (70%)

- Heat the oven to 180°C (fan 160°C). Line an 18–20 cm square tin with baking parchment.
- Whisk oat flour, cocoa, baking powder and salt in a bowl.
- In a second bowl, whisk yogurt, eggs, sugar, oil and vanilla until smooth.
- Fold the dry ingredients into the wet mix until just combined. Stir in most of the chocolate chips, reserving a few for the top.
- Spread the batter evenly in the tin, scatter the remaining chips, and bake for 20–24 minutes. The centre should be set but still slightly soft — a skewer should come out with a few moist crumbs, not wet batter.
- Cool in the tin for 15 minutes, then lift out and cool fully before cutting into 9 squares.
Chef tips
- Pull them early for a fudgier centre; overbaking dries yogurt-based batters.
- Blend rolled oats to a fine flour if you do not have oat flour.
Substitutions
- Light brown sugar → Coconut sugar (same weight)
- Chocolate chips → Chopped dark chocolate
