A moist banana bread remake using ripe bananas, oat flour, Greek yogurt and a scoop of unflavoured or vanilla protein powder — still sweet and sliceable, with less oil than a traditional loaf.

Why this remake works

Ingredients

Fine oat flour

Vanilla or unflavoured whey/plant protein powder

Ground cinnamon

Wet ingredients

Very ripe bananas, mashed
3 medium
Greek yogurt (0–2%)
120 g
Eggs

Honey or maple syrup

Olive oil or rapeseed oil

Vanilla extract

Walnuts, chopped (optional)

Method

  1. Heat the oven to 175°C (fan 155°C). Line a 900 g / 2 lb loaf tin with baking parchment.
  2. Whisk oat flour, protein powder, baking powder, cinnamon and salt in a large bowl.
  3. In another bowl, whisk mashed banana, yogurt, eggs, honey, oil and vanilla until smooth.
  4. Fold the wet mixture into the dry ingredients until just combined. Stir in walnuts if using. Do not overmix.
  5. Pour into the tin and smooth the top. Bake for 50–60 minutes until a skewer inserted in the centre comes out clean or with a few moist crumbs.
  6. Cool in the tin for 15 minutes, then turn out onto a rack to cool fully before slicing into 10 pieces.

Chef tips

  • If the top browns early, tent loosely with foil for the last 15 minutes.
  • Protein powders vary in absorbency — if the batter looks extremely thick, loosen with 1–2 tbsp milk.

Substitutions

  • Protein powder → Extra 40 g oat flour (loaf will be less high-protein)
  • Walnuts → Dark chocolate chips
